CILANTRO LIME CHICKEN WITH AVOCADO SALSA

Grilled Cilantro Lime Chicken with Avocado Salsa – a healthy, easy, 30 minute meal packed with fresh zesty flavors. This Cilantro Lime Chicken is marinated with fresh zesty lime juice, earthy ground cumin, and fresh cilantro.

While the Chicken itself is amazing, the kicker and element that takes this dish over the top is the avocado salsa on top!

This was easy and very good. I did a weird substitution since I ran out of lime juice and used some lime jello mix. It still turned out really good Delicious!! Definitely needs the red onion in the picture for the salsa. Next time, I might just add it to the salsa. Everyone loved it
My family really enjoyed this. It will be one of our frequent meals. The avocado salsa is addicting!This was super easy to make and it was delicious. I added tomatoes to the topping.

INGREDIENTS

CILANTRO LIME CHICKEN:

  • 1.5 lb. boneless chicken breast
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt

AVOCADO SALSA:

  • 4 avocados, diced
  • 1/2 cup fresh cilantro, diced
  • 3 tablespoons lime juice
  • 1/2 tablespoon red wine vinegar
  • 1/2 teaspoon red pepper flakes
  • 1 garlic clove, minced
  • salt to taste
