Classic (Vegan) Peanut Butter Cookies

Thick, chewy, classic peanut butter cookies, in vegan form! These cookies have so much peanut-y flavour, you’d never be able to tell they’re vegan!
Ingredients
    Dry Ingredients:
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
    Wet Ingredients:
  • 1 cup peanut butter, unsalted and unsweetened
  • 1/2 cup vegan butter, room temp (I used Earth Balance)
  • 1/2 cup cane sugar
  • 1/2 cup brown sugar
  • 1/4 cup dairy free milk, unsweetened
  • 1 tsp vanilla extract

Instructions
  1. Preheat oven to 350 F
  2. In a medium bowl, mix together all dry ingredients (flour, baking soda, baking powder, and salt) and stir to combine
  3. In a large bowl, mix together peanut butter and room temperature vegan butter using an electric or stand mixer (if you're peanut butter is too hard or stiff, gently heat it in the microwave for 15-30 seconds)
  4. Add in both types of sugar to peanut butter/butter mixture and continue to mix until combined
