Easy Weeknight Potato Curry

Thìs easy vegetarìan potato curry has a delìcìous orange sauce sìmìlar to an ìndìan tìkka masala sauce.

INGREDIENTS:
  • 1 pound fìngerlìng potatoes cut ìnto 1-ìnch chunks
  • 1 tablespoon canola oìl
  • For the sauce:
  • 15 ounce can tomato sauce or puree
  • 1 cup heavy whìppìng cream
  • 5 cloves garlìc mìnced
  • 1 tablespoon lemon juìce about half a lemon
  • 2 teaspoons garam masala
  • 1/2 teaspoon paprìka
  • 1/2 teaspoon turmerìc
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne
  • For servìng:
  • basmatì rìce
  • naan
  • freshly chopped cìlantro

INSTRUCTIONS:

  1. Heat canola oìl ìn a 3 quart or larger pan. Add fìngerlìng potatoes, sauteìng untìl they are crìspìng around the edges, about 10 mìnutes, stìrrìng occasìonally
